The wine Ro.Sa.To. is produced from Sangiovese, Canaiolo Nero and Sagrantino grapes using the classical “saignée” method. All grapes are produced on the estate of Montegiove, exclusively from selected grape clusters, hand-picked at perfect ripeness and meticulously vinified in the castle cellars. The vineyards are located on sites carefully selected with respect to soil and sun exposure, at altitudes between 450 and 500 meters. Ro.Sa.To. is slowly fermented at a temperature below 16 °C to ensure the utmost expression of aroma. The wine has a bright pink colour with an intensive aroma of berries and fruit. Perfect served chilled on a hot summer day.
